Aimee Aristotelous

Aimee Aristotelous is a best-selling author with a notable publishing career at Simon and Schuster since January 2019, delivering works such as Almost Keto and The Whole Pregnancy, and currently working on Super Simple Keto. In addition to literary accomplishments, Aimee has been an author for Skyhorse Publishing, Inc. since July 2017. Prior to these roles, Aimee served in various capacities at the Academy of Art University from September 2008 to July 2018, including as Associate Director of Outreach, where brand awareness and student recruitment efforts were prioritized. Aimee successfully expanded the Orange County market of prospective students, significantly increasing contacts and managing outreach representatives at nationwide events.
