Maggie G. Lyon

Maggie G. Lyon, RD, LDN, serves as a Practitioner-in-Residence and Adjunct Professor at the University of New Haven, focusing on Healthy Food Preparation and Food Science. With extensive experience as a Clinical Dietitian at Middlesex Health and Cheshire House Health Care Facility, Maggie conducted nutrition assessments and developed individualized interventions in various clinical settings. Prior roles also include Kitchen Manager at Next Door Restaurant, where back-of-house operations were overseen, and various educational positions where cooking and nutrition were taught to diverse age groups. Academic qualifications include a Bachelor of Science in Dietetics and Clinical Nutrition Services from the University of New Haven and a Bachelor of Arts in Baking and Pastry Arts from The Culinary Institute of America. Maggie is currently pursuing a Master of Business Administration at the University of New Haven, expected to complete in December 2024.
