Ayoub Boukentar is an accomplished culinary professional with extensive experience in high-end dining establishments. Currently serving as the Sous-chef de cuisine at ABSTEAK BY CHEF AKIRA BACK since August 2022, Boukentar specializes in modern Japanese cuisine curated by Michelin-Starred chef Akira Back. Prior to this role, Boukentar was a Chef de partie at La Mamounia Marrakech, where responsibilities included wok preparation under the guidance of two Michelin-star chef Jean-Georges Vongerichten. Additional experience includes significant positions at renowned venues such as Mandarin Oriental Hotel Group, Hakkasan Group, Fairmont Royal Palm Marrakech, Four Seasons Hotels and Resorts, and Sofitel Marrakech. Boukentar holds a Diplôme de Technicien en Cuisine from the Institut spécialisé de l'hotellerie et de la restauration Marrakech, completing the program in 2011.
