Seamus L. is a Pelagic Development Officer at Bord Iascaigh Mhara, Ireland's Seafood Development Agency, since September 2018, focusing on transitioning the Pelagic Sector to a market-led, value-added business model through innovation and sustainable practices. In addition, Seamus L. serves as a Food Hero Administration Officer, working on the Interreg Food Heroes project to help businesses enhance revenue by adopting sustainable practices and minimizing food waste. Previous culinary experience includes roles as Chef De Partie at Cavan Crystal Hotel and Commis Chef at The Devenish Lounge and McNean House & Restaurant. Seamus L. has a Bachelor of Arts (Honours) in Culinary Arts from Letterkenny Institute of Technology, a Diploma in Food Manufacturing Management from University College Cork, and a certification in BRC Global Food Standards. Currently enrolled in an 11-month Innovation Advisory Graduate Programme with BIM's Seafood Innovation Hub, Seamus L. identifies new products and opportunities for the Irish seafood sector.
