Leading the innovative culinary team at Caramel Group is Corporate Chef Sunil Vaz. His training, skills and creativity led to him joining the group for the conception of Caramel Dubai in 2009. He now overseas all three Caramel restaurants in Dubai, Abu Dhabi and Nairobi as well as overseeing the pre-opening preparations for the soon to open Muscat property.
Born in Kuwait before moving to study in Bombay, Chef Vaz graduated in Culinary Arts & Sciences at the Goa Culinary Institute.
With a collective experience of more than ten years in the United States, the United Kingdom and now the United Arab Emirates; Chef Vaz has drawn upon his travels to create distinct flavor combinations for the American contemporary dishes fashioned for his menus.
In 2005, Chef Sunil decided to pursue his passion for food and moved to London to work under the world famous Gordon Ramsay first at at his Maze restaurant alongside celebrity chef, Jason Atherton and then subsequently at Verre in Dubai.
In 2008, Chef Sunil moved to Dubai to spearhead the kitchen at the Capital Club in Dubai International Financial Centre, before taking the head chef position at Caramel’s flagship venue. The passion and creativity he showed coupled with the leadership in his kitchen soon led to his appointment as Corporate Chef for the Group as expansion culminated in openings in Abu Dhabi and Nairobi.
Chef Sunil and his culinary creations have given birth to new dining trends in the United Arab Emirates hospitality industry and the Caramel kitchens have been honored with awards in all three cities. The highlight being back-to-back coveted Time Out Dubai Restaurant Awards for best bar food.
