Erica Knott

Sales Director - Plant Based Innovation at Greenleaf Foods

Erica Knott has worked in various roles in the food industry, demonstrating expertise in product development, innovation, and marketing. Erica is currently serving as the Sales Director for Plant-Based Innovation at Greenleaf Foods since September 2021. Prior to this, Erica worked at Conagra Brands from 2016 to 2021, where they held several positions including Director of Product Development for Snacks & Baking and Director of Product Development for Refrigerated & Design Innovation. Erica also served as Manager of Disruptive Innovation during this time. Prior to Conagra Brands, Erica worked as the Marketing and Innovation Manager at Fuji Food Products Inc. from 2015 to 2016, and as the Innovation & Technical Services Manager and Innovation Specialist at Dotta Foods International from 2013 to 2015. Erica began their career as a Food Scientist at ConAgra Foods in 2009, eventually becoming an Associate Food Scientist. Erica also gained valuable experience as a Product Development Intern at ConAgra Foods in 2008.

Erica Knott pursued their education at the University of Wisconsin-Madison from 2005 to 2009, where they obtained a degree in Food Science-Business, with a focus on Food Science. Later on, from 2011 to 2013, Erica completed their Master of Business Administration (MBA) in Leadership at Creighton University's Heider College of Business.
