Mariano Gascon has an extensive work experience in the flavor industry. Mariano started their career as a Junior Flavor Chemist at IFF in 1987 and worked there until 1992. Mariano then joined Virginia Dare Extract Co. as a Flavor Chemist and stayed there until 1997. At Wixon, they served as the Flavor Lab Director from 1997 to 2007 and subsequently became the VP of Research & Development until 2014. From 2014 to 2017, Mariano worked as the Senior Technical Director of New Products and Innovation at Gold Coast Ingredients. Mariano then joined Sensapure as the VP of Research and Development - Chief Flavorist from 2017 to 2019 before taking on their current role as the Vice President of R&D - Chief Flavorist at Jogue Inc.
Mariano Gascon obtained a Bachelor's Degree in Biochemical Engineering from Instituto Politécnico Nacional in 1988. Mariano then pursued a Master's Degree in New Products Design and Development from Northwestern University - Kellogg School of Management, which they completed between 2006 and 2008. After that, Mariano attended Kendall College and obtained a Professional Chef and Caterer degree, specializing in Food Preparation, Professional Cooking, and Kitchen Assistance from 2008 to 2010. Additionally, they have a certification as a Certified Flavor Chemist from The Society of Flavor Chemists, Inc.
