Matthew Gilbert is an accomplished culinary professional with extensive experience in high-end hospitality settings. Currently serving as the Executive Chef and Director of Food and Beverage Operations at Medinah Country Club since November 2019, Matthew previously held the position of Executive Chef at Shore Lodge, a luxury property in McCall, Idaho, from September 2017 to November 2019. Prior to that, Matthew's career included roles as Executive Chef at The American Club of Hong Kong Tai Tam and Executive Sous Chef at The American Club of Hong Kong, as well as Chef de Cuisine at Fairmont Hotels and Resorts. Earlier experience includes a tenure as Executive Chef at Plonk Wine. Matthew Gilbert is a graduate of the New England Culinary Institute with an AOS degree.
