Rachael Clark Ms, Rdn

Rachael Clark, MS, RDN, currently serves as the Metabolic Kitchen Director and Culinary Medicine Instructor at the University of Utah since August 2023 and functions as a Nutrition Content Specialist at Opsis Health since June 2022, focusing on innovative and accessible health solutions. Rachael has experience as an EATS Park City Educator, teaching cooking classes for elementary students, and developed a culinary medicine cooking series for the University of Utah Sugarhouse Clinic during a capstone project. Rachael's master’s thesis involved creating a pediatric nutrition guidebook, contributing to various supervised practices in clinical and food management settings, and previously worked in meal preparation and personal training, establishing a strong foundation in nutrition and health education. Rachael holds a Master's degree in Nutrition Education & Research and a Bachelor's degree in Public Health Education and Promotion, both from the University of Utah.
