Dan Xiao

Dan Xiao is a Principal Scientist at PepsiCo, having joined the company in November 2021. Prior to this role, Dan served as Application Lead at Archer Daniels Midland Company from April 2017 to November 2021 and as a Senior Food Scientist at General Mills from April 2011 to April 2017, focusing on product development for new innovations within Global Snacks. Dan has a strong background in creating prototypes and supporting product platforms across various categories including snacks, meals, and cereals. Dan holds a Doctor of Philosophy (Ph.D.) in Microbiology, General, Food Science and Technology from the University of Tennessee, Knoxville, completed between 2007 and 2010.
