Aaron Lores Dragone

Aaron Lores Dragone is an accomplished culinary professional currently serving as Head Chef at The Hedges Inn since July 2024 and as a Sous Chef at SARTIANO'S since May 2023. Aaron has accumulated extensive experience in various high-profile establishments, including roles as Sous Chef and Garde Manger at Portale Restaurant and Co-Founder of Colaboración Lores, a business specializing in the delivery of export-quality frozen seafood products. Previous experience includes positions as Foreign Chef at Vinpearl, Chef de Partie at both Perry St Restaurant and Pajares Salinas, and Lead Line Cook at Nico’s Arepas Grill. Aaron holds a Technical Degree in Professional Cooking from Servicio Nacional de Aprendizaje (SENA) and has pursued agricultural engineering studies at Universidad Nacional de Colombia, alongside language education in English.
