Sarah Edstrom, MS, RD, CDCES, is a Certified Diabetes Care and Education Specialist at STRIDE Community Health Center since July 2019, where responsibilities include providing Medical Nutrition Therapy, diabetes self-management education, and implementing a continuous glucose monitor program. With prior experience as a WIC Dietitian and Diabetes Educator at Tri-County Health Department, Edstrom has facilitated programs to promote healthy lifestyle changes and provided nutrition education across various populations. Edstrom also volunteers as the Colorado Coordinating Body Librarian for the Association of Diabetes Care & Education Specialists, managing library resources and assisting with continuing education planning. Educational credentials include a Bachelor’s Degree in Dietetics from the University of Northern Colorado, a Master of Science in Consumer Science from the University of Wisconsin-Madison, and a Bachelor of Science in Family and Consumer Science from the University of Wisconsin-Stevens Point.
