Monclus also worked as a Beverage Director- Manager at Socarrat Restaurants and as a General Manager at Yerbabuena & Co. With a background in sommelier training from Universidad de Valladolid and Camara de Comercio de Madrid, Monclus has consistently demonstrated expertise in managing beverage programs, developing wine lists, and improving overall profitability for various establishments.
