Overview:
To prepare pack lunches and food items relating to pack lunches and items such as salad dressings, produce and proteins. Need to be able to constantly work in a fast paced environment and work well with a team and strive for achieving the highest level of food quality, customer satisfaction, and productive engagement with peers.
Minimum Required Qualifications
The person in this position needs to:
Frequently move about the kitchen and storage areas with efficiency and speed.
Frequently use hands to handle knives for cutting and slicing meats, proteins, vegetables, etc.
Frequently use hands to prepare menu items, while stirring, mixing, scooping, etc.
Frequently use hands to operate various professional kitchen equipment such as mixers, meat slicers, etc.
Frequently communicate with other kitchen and serving staff regarding menu items, guest food orders, etc.
Frequently read and interpret recipes.
Occasionally position self to place kitchen items on lower shelves.
Occasionally use cleaning items such as brooms and mops.
Frequently move equipment, supplies and boxes weighing up to 50 pounds across short distances.
Must have a valid driver’s license, a clean driving record and be insurable on our company liability insurance as a driver of company vehicles.
Essential Functions
Create a positive and energetic environment that supports the delivery of an exceptional guest experience while upholding the highest level of TCR and Relais & Châteaux standards.
Maintain the extraordinary five star TCR image and resort appearance including all service, cleanliness, and appearance standards.
Set up and organize the work area.
Maintain a clean, sanitary and efficient environment.
Read the reservation book in the kitchen and estimate the amount of food products needed for pack lunches. Learn to do this proactively, i.e. projecting one’s needs for the next day rather than reacting to them on a need right now basis.
Slice meat, cheese and vegetables using the slicer for pack lunches and cold menu items.
Prepare vegetables and fruits for pack lunches and cold menu items - wash, peel, cut, slice and or shred.
Prepare and maintain proper inventory levels of pack lunch condiments and containers such as baggies, napkins, candy, etc.
Prepare pack lunches as ordered by guests and guides in a time manner. Transfer lunches to walk-in or reach-in coolers as soon as possible to maintain proper temperatures.
Oversee that the delivery of pack lunches to guests are on time.
Prepare and keep proper inventory levels of condiments and dressings as set by kitchen demands.
Ensure foods are properly labeled, dated, stored and utilized.
Prepare sandwiches, salads, and cold menu items as requested by the Breakfast/Lunch team.
Maintain produce in walk-in, in an efficient and clean environment.
Take daily count and maintain inventory of pack lunch items and beverages proactively. Restock on a daily basis.
Clean, sanitize and organize the work area at the end of shift and perform daily, weekly and monthly cleaning tasks per the lists provided.
Remove trash and garbage to designated containers outside as necessary.
Sweep kitchen floor, mopping up spills, etc., to maintain a clean and dry floor.
Assist with the cook's weekly cleaning schedule.
Assist with deliveries - Ensures that food and product are properly put away in a timely manner after being properly checked in.
Maintain a busy and productive work space.
Maintain a team-oriented attitude.
Assist fellow co-workers when and where needed.
Perform any reasonable duties as deemed appropriate by management.
Have a thorough knowledge of all aspects of Triple Creek Ranch.
