Simone Dumergue has an extensive work experience spanning several industries and roles. Simone began their career as a Health Promotion Officer at Canterbury Area Health Board in 1992. Simone then worked as a Nutritionist at Fonterra until 1996, followed by roles as an Assistant Brand Manager at Anchor Foods (Fonterra) and a Brand Manager at Allied Bakeries. From 1998 to 2001, they held the positions of General Manager at Dairy Advisory Bureau and Global Health Communications Manager at Fonterra.
In 2002, Simone became the Head of Marketing at CPIT, where they worked until 2007. During their time there, they played a crucial role in establishing CPIT as an innovative leader in the education sector. Simone then took on various marketing contract, consultancy, and interim management assignments at WCBS, City of Bristol College, and 360 Legal Group.
Simone joined Shaw Trust as a Marketing Manager in 2012 before moving to the University of Bath in 2015. At the University, they served as the Head of Marketing for the Faculty of Science until 2023, and later became the Head of Product and Business Development for the same faculty. In these roles, they focused on developing, implementing, and facilitating product development plans, identifying market development opportunities, managing recruitment links, and providing strategic marketing advice.

Simone Dumergue holds a BSc (Hons) in Human Nutrition from the University of Otago, NZ, which they obtained from 1987 to 1990. Additionally, they obtained a Postgraduate Diploma in Marketing from the Chartered Institute of Marketing from 1996 to 1998.
