Nicole Baker

Nicole Baker is an experienced professional currently serving as an Office Coordinator/Accounts Payable at Valor Education since December 2022, where responsibilities include monthly reconciliation of credit card purchases, invoice payments, and inventory management of curriculum resources. Previously, Nicole owned Celebration Day, developing and marketing a private label unicorn party package on Amazon from March 2020 to October 2022. Earlier career roles include Renal Dietitian at Fresenius Medical Care, where Nicole contributed to patient care through interdisciplinary teamwork and nutrition education, as well as Project Coordinator for the Best Food FITS program at Texas State University, focusing on childhood obesity awareness. Additionally, Nicole gained research experience as a Graduate Researcher at the Institute for Obesity Research and holds a Master’s degree in Nutrition from Texas A&M University, along with a Bachelor’s degree in Nutritional Sciences from the same institution.
